Description

Tonight’s upbeat, motivational film “Forks Over Knives” investigates claims that people with degenerative diseases (such as type 2 diabetes, heart disease, hypertension, and cancer) can control or even reverse their illness through diet. The film proposes we improve our health by eating a “vegan”, plant-based diet of fruits, vegetables, grains, nuts, and beans (without meat, dairy, eggs, or processed, sugary, salty, fatty foods), and exercise. The film features Dr. Caldwell Esselstyn, his spouse, and some of their Cleveland Clinic Wellness Institute patients who benefited from healthy diets, plus other providers and their patients. Further support for a plant-based diet is provided by Dr. D. T. Colin Campbell, author of The China Study http://thechinastudy.com and Project Director of the China-Oxford-Cornell Diet and Health Project.      Joining us on Feb. 10 in Naperville for “Forks Over Knives” showing and discussion will be Nicky Polosky, Co-Owner of Two Mothers Foods (healthy foods made with local, seasonal ingredients) in Naperville http://www.twomothersfoods.com/ and Kim Marsin, an organic farmer from St. Charles and Co-Owner of Sweet Home Organics http://sweet-home-organics.com/. We’ll discuss questions such as: What is a vegan diet and what are pros and cons of going vegan? How could my diet contribute to the local economy and reduce my carbon footprint? What are some simple steps to enjoy healthy, fresh, affordable food?
